Veggie Tofu.

You’ve hit a wall. It’s only been three days since the work week began and you’re pooped. It’s hump day, ain’t nobody got time to cook a fancy meal. I made up a 15 minute meal that satisfied my hunger and spared the calories. It’s SIMPLE!

2 peppers

1 head of cauliflower

2 heads of broccoli

1 onion

1 handful of green beans

1 package of cherry tomatoes

1 package of plain tofu

1 zucchini squash

1 bottle of Honey ginger dressing. I used

Remove tofu from package. Place it in between two paper towels and absorb the moisture. Heat a cast iron skillet on medium heat with coconut oil. Cube the tofu and cook it to your liking. Add any seasoning you like.

In a separate wok or pan cook all the veggies for ten minutes on medium. I cooked the broccoli and cauliflower together on higher heat because they are tougher.

Turn the burner to high and pour the dressing over the veggies. It should steam a lot. Leave it on high for 5 minutes. I added the cherry tomatoes last because they cook down really fast.

Turn to low and add the tofu. Serve over rice, glass noodles or just alone. Voila!
