Sweet Potato Quiche.
-2 Sweet potatoes
-4 Slices of bacon
-1 Yellow onion
-2 cups of spinach
-Crumbled goat cheese
Set oven to 400 degrees.
Slice the sweet potato by hand or with a mandolin. Layer in a pie dish.
Drizzle with EVOO and season to taste.
Bake the sweet potato pie crust for 15-20 minutes.
While the pie crust bakes saute the onions and spinach on medium to low heat.
Cook the bacon.
Mix the eggs, bacon, goat cheese and spinach mixture. Lower heat to 375.
Pour mixture over cooked sweet potato.
Bake for 30-35 minutes.
