Sausage & tortellini soup.

Pictures don’t do this soup justice. Tastes better than it looks. It was a dreary day so I felt like making something comforting.

Ingredient Check list:

Olive oil, salt, pepper

1 pound ground Italian sausage (I love to use half hot, half sweet sausage)

1 diced onion

1 tablespoon minced garlic

1 32 oz container of vegetable broth

1 28 oz can of crushed tomatoes

2 tablespoons chopped basil

2 cups fresh spinach

1 9 oz. package of tortellini


-Using a dutch oven, set to medium-high heat. Drizzle in Olive oil once warm. Toss in diced onions and sautée until softened.

-Crumble in Italian sausage. Add minced garlic. Cook until sausage is thoroughly cooked

-Add can of crushed tomato, veggie broth, basil, salt and pepper.

-Bring to a boil.

-Once boiling reduce to simmer. Place lid on top. Simmer 30 minutes.

-Add spinach and tortellini. Simmer for 10 minutes.
