
I got the call that my wedding dress has arrived. I didn’t diet like I intended to the past three months. Time to kick some calories and switch from beef to fish tacos.
Fish Tacos!
Here’s what you need:
Shredded red cabbage
1 mango
1 avocado
2 limes
cilantro
salt/pepper
olive oil
2 filet of cod
1 package of corn tortillas (I went to the local Mexican grocery to get homemade tortillas)
Spices for the cod:
Salt
pepper
cayenne
coleman’s dry mustard
cumin
oregano
creole spice mix
-Two ways you can cook the cod. Bake or on the grill. I fired up the grill.
-I rinsed the cod and patted dry with paper towel.
-Next I blended the salt, pepper, cumin, creole seasoning, paprika, oregano, mustard, and cayenne.
-Squeeze half a lime over both sides of the cod. Rub in the spices.
-Place the fish in a cast iron skillet and place on the grill. Cook on each side for five minutes.
-In a separate bowl combine shredded red cabbage, mango, lime juice, cilantro and avocado.
There you have it! Easy fish tacos.
Side note- I placed the tortillas on the grill to warm them up. Made a nice warm toasty blanket to bring all the flavors together. Enjoy.
