After over indulging for brunch yesterday, I wanted to eat healthy today. Chicken salad might be one of my favorite lunches. The only problem is, I dislike mayo. I don’t like the texture, taste and look of it. I find no nutritional value in it either. I typically eat chicken salad in the summer when I can use grilled chicken. I’m talking BBQ chicken thighs on the grill. I stopped at the food emporium on 9th. Walking past the vegan/vegetarian aisle, the Vegenaise caught my eye. I’ve heard of it but never tried it. Today was the day. At $6.99 it better be good. In addition I bought
1 bunch of celery
1 honey crisp apple
1 rotisserie chicken
1 head of Boston lettuce
Shred the chicken and mix it with the apple, celery, salt, pepper and vegenaise.
