Crowd Pleaser Appetizers!

Are you hosting an Oscar viewing party this Sunday? Maybe a party of some kind. Here are two apps, you can fix in half an hour. I had to go to a family gathering on Saturday and forgot to prepare for it. I always start by looking in my fridge to see what I can work from. How much food do you end up throwing out each week? I know I waste a lot.  Use what you have.

Step 1:

Search the fridge and cabinets. Make a list of what you’ll need to buy to pair with what you already have. It sounds so simple but that one step will save you time and money. So many times I’ve been lazy about checking to see what I have and ended up with doubles.

I had ground chicken in the freezer and franks red hot left over from Super Bowl in my spice cabinet. That called for Buffalo Chicken Meatballs! Here is the recipe.

1 pound of ground chicken

1 pound of ground pork

1 bunch of fresh parsley

I cup of either Italian bread crumbs or Panko

1 egg

1 onion

4 celery stalks

1/2 cup of blue cheese

1 Stick of butter

1 bottle of Franks red hot

2 cloves of garlic

Your Crockpot is all you need to cook with.

First I melted some grass fed butter in 2 cups of hot sauce.

Blend the pork, chicken, egg, parsley, garlic, salt, pepper, onion, celery, bread crumbs and blue cheese.

Form into meatballs. I made mine too big. I suggest making them smaller. Cocktail sized.

Place them in the crockpot, one at a time. Make sure each is coated with the hot sauce. Turn the temp to high and cook them for two hours. You can serve them on a bun as sliders, over salad or on their own. Don’t for the ranch!

I had a whole pineapple and a bag of unopened Tostitos chips, also left over from Super Bowl. I decided I’d make my own salsa and put it in the pineapple. I’m sure its been done a billion times. But it seemed like a fun idea.

Slice the pineapple on the side.

Core it and chop up the insides. Toss them in a bowl. Pour any excess pineapple juice into the bowl. Cut up 6 plum tomatoes, two peppers and one clove of garlic. Add some chopped cilantro, salt, pepper and juice of three limes.
