
I don’t have time to cook like a used to. Everything I do is out of convenience now. Also EVERYONE in my office is currently sick. I decided some homemade chicken soup was just what we needed!
My two favorite shortcuts are a cooked rotisserie chicken and mirepoix mix.
Here’s what you’ll need:
Rotisserie Chicken (shredded)
Mirepoix mix (chopped carrots, onion and celery)
2 garlic cloves
3 boxes of Chicken broth
2 Bay leaves
Fresh thyme. Dried is fine too
Salt, Pepper and oregano.
Pasta (we used ditalini) Next time going to use egg noodles.
Directions:
In a dutch over on medium/high heat drizzle in some olive oil. Saute carrots, onion and celery for ten minutes.
Add garlic and cook 5 more minutes.
Add bay leaves, thyme, parsley, oregano, salt and pepper. Let simmer 1-2 minutes.
Add chicken broth, turn to boil and let it cook for five minutes.
Add noodles and boil for ten minutes.
Turn to simmer and add chicken. I also squeezed a little bit of lemon juice.
Seeve right away!
