
Trying to cook these past few weeks has been impossible. I did however find a way to prepare salads for the week.
What you’ll need
2 Sweet potatoes
1 Rotisserie chicken
Shredded cheese
Greek Yogurt
2 limes
Romaine lettuce
Tomatoes
Quinoa
To start I shredded the chicken and placed in a bowl.
Cut tomatoes and placed in a bowl.
Peel, chop and bake sweet potato.
Prepare quinoa. (We had some that our friends Annalise and Craig dropped off)
To assemble
– One large scoop of greek yogurt at the bottom of the jar.
– Add sweet potatoes
-Add quinoa
-Add shredded cheese
-Add tomato
-Add chicken
-Squeeze some lime juice over it.
-Top with Romaine.
