Sweet potato & Banana waffle.

I get about an hour when the baby is napping to whip up something quick. I found these already cubed sweet potatoes at target. Other then roasting them it’s only blending the ingredients and onto he waffle maker..

What you’ll need:

1 ripe banana

1 sweet potato

1/2 cup coconut flour

1 tsp baking soda

1 tsp cinnamon

1 tsp vanilla

6 eggs

Nut butter for topping (I get it at Trader Joe’s)



Enjoy this guilt free breakfast. Freeze the extra for later or for work. Happy weekend.
