
I had to do something with all that homemade jam. I might have reached too high when I decided to make pop tarts. Good thing is that Michael, Sean and my Mom loved them.
Lets start with the dough. The easiest part actually.
What you’ll need:
2 1/2 cups of flour
8 tablespoons of unsalted butter
1 teaspoon sugar
6 tablespoons of shortening
6 tablespoons of cold water
Salt

Combine flour, sugar and salt in a food processor. Slowly add the butter and shortening until chunky. Then slowly add the teaspoons of cold water. Wrap dough in plastic wrap and refrigerate overnight.
I rolled out the dough on a floured surface. I just eye balled and cut a square. Placed each square on a greased baking sheet. Brushed with an egg wash.


Keep rolling out dough and cutting squares.
On the side, in a saucepan, heat up 3/4 jam with a tablespoon of cornstarch and water. Stir until thickened.

Place some jam on each square.

Place square piece of dough over top.

Close each side with the pinch of a fork. Then poke holes in the top.


Set the oven to 350. Place pop tart in the refrigerator for half an hour.
Bake for 30 minutes.
They didn’t look perfect but they tasted great. I think I’ll stick to cooking. Baking is too hard.
