I try to make different meals for my man. Sometimes I set the bar too high though. Men are simple. In some cases. All Sean has been talking about is Spaghetti pie and ice cream pie. For our one year engagement anniversary I decided to drive home from NYC to Poughkeepsie to surprise him. It was such a hit he passed out cold at 8pm. Sometimes giving them a full belly and quiet to rest means a lot. If I want a sexy night I’ll make sushi next time.
Here’s what you’ll need:
Ice Cream Pie
1 Pint of ice cream of your choice
1 8 oz. container of Cool whip
1 Oreo pie crust (many stores have pre-made or crumle oreos and blend with butter.
1 Package of Spaghetti
1 stick of butter
1 package Pancetta or the deli crew can cut you two inch thick pieces
1/2 pound ground Beef
1 15 oz can of tomato sauce
1 garlic clove
1 1/2 cups of mozzarella
1/2 cup of Gruyere
4 oz Cottage cheese
1/2 cup of Ricotta
Ice Cream Pie:
1. Make the ice cream pie first since it takes several hours to re-freeze.
2. Let the ice cream soften. Simply combine it with the cool whip and place in the Oreo pie shell. I crumbled some Oreo on top. Place it in the freezer for a few hours.
1. Boil the spaghetti in salted water for 7 minutes. Drain and let cool.
Cook the pancetta in a saucepan. In a separate pan brown the beef with Italian seasoning, tomato paste and garlic. I had left over cooked beef from the night before.
In a bowl combine the beef, pancetta, beaten eggs, melted butter, parsley, oregano, ricotta, salt, pepper and tomato sauce. Throw in a handful of the mozzarella and gruyere. Stir it all together.
Pour the contents into a buttered pie dish.
Top it with the remaining cheese and bake for 40 minutes at 375.
I needed some green so I sauteed up some brocollini.
Now crack a bottle of red and stuff your face!!
