My sister had a bunch of our friends over for pizza on Saturday. My friend Alicia and her boyfriend Bruce brought a case of “Up in Smoke BBQ sauce.” Bruce created the recipe and the artwork for the bottle. His family has a catering business in his hometown of Ohio. He has several different flavors. I was excited to try it on some meatloaf.
Here’s the link to his BBQ Sauce! https://www.uisbbq.com
What you’ll need:
1 1/2 pounds of meatloaf mix
BBQ sauce
1 onion chopped
2 carrots chopped
2 celery chopped
1 egg
Breadcrumbs (I usually put Italian bread in the food processor but for sake of time I used store bought breadcrumbs)
Bacon bits (I had three pieces left over from breakfast)
To make:
Pre-heat oven to 350
Sautee onion, carrot and celery.
Add olive oil, salt and pepper.
In a bowl blend meat, sauteed veggies, breadcrumbs, egg, bacon and 2 tablespoons of BBQ sauce.
Mold into a meatloaf and spread some BBQ sauce on top.
Bake for one hour at 350 degrees!
Happy Monday!
